Gradually combine wet and dry ingredients to form a soft dough.
Roll dough on a lightly floured surface into a rectangle.
Brush melted vegan butter over the dough, then sprinkle the cinnamon-sweetener mixture evenly.
Roll up the dough tightly and slice into 8–10 rolls.
Place rolls in a greased baking dish or Airfryer-safe tray.
Bake for 18–22 minutes (Airfryer: 15–18 minutes) until golden and cooked through.
Optional: Mix powdered erythritol, plant-based milk, and vanilla for a glaze and drizzle over warm rolls.
Why this recipe is healthy 🥗
Pumpkin adds fiber, beta-carotene, and natural sweetness, reducing the need for excessive sugar. Using plant-based milk and butter keeps it vegan and lighter than traditional recipes, while still delivering that comforting, indulgent taste.
FAQ ❓

Can I use whole wheat flour?
Yes! Use half whole wheat flour and half all-purpose to keep them soft while adding more fiber.
Can I make them nut-free?
Yes, just avoid adding any nut-based milk or butter; coconut works perfectly.
